The Amadeus Events team delivered a stunning three-course meal for visitors to the Nisa Expo 2022, marking the sixth year the business has catered at the event.
The circus-themed dinner, held at NAEC Stoneleigh, went down a treat with Nisa’s colleagues, suppliers and independent retailers.
The Amadeus Events team worked in tandem with event organiser XSEM and event planners The Angels Events - a huge team effort combining to entertain and feed around 900 guests plus crew.
Based at NAEC’s Stoneleigh’s Hall 1, with no fixed kitchen, Amadeus’ Executive Head Chef, Darren Proud and the Amadeus operations team lead by Laura Holden, built the kitchen from scratch, bringing foodservice equipment and all produce from its base at the NEC in Birmingham.
The three-course meal, devised by Darren, used only the freshest ingredients which was all cooked on site, with an oven to plate service to delight his guests. On the menu was:
Falafel with tabbouleh salad and mint dressing (vg)
Cushion of lamb, truffle anna potato, Chantenay carrot, broad bean puree
Apple mousse with soft toffee centre encased in red apple glaze
The bespoke menu was discussed at a menu tasting earlier this year, using a mixture of Amadeus and Nisa produce. The team had to factor in many dietary requirements for this event, as well as catering for all crew involved in the evening’s performances.
